Hot Chocolate Jacques Torres¶

Ingredients¶
2.5 cups (568 g) whole milk
1 cup (170 g) 60% dark chocolate
0.5 cup (50 g) milk powder
1 tsp (5 g) cornstarch
some whipped cream
Cookware¶
1 medium saucepan
1 small bowl
Instructions¶
Step 1¶
Bring whole milk to a boil in a medium saucepan over medium-high heat.
Step 2¶
Lower the heat to medium then add the 60% dark chocolate (discs or coarsely chopped), whisking vigorously until the chocolate is completely melted.
Step 3¶
Whisk milk powder and cornstarch together in a small bowl then add to the pot, still whisking, until everything is dissolved and the mixture is smooth and thick.
Step 4¶
To serve, divide the hot chocolate among four mugs or glasses, then garnish each with a large dollop of whipped cream (optional).
