Ingredients
- 0.75 cups melted coconut oil
- 1 cup sugar
- 3 eggs
- 0.5 tsp vanilla
- 2 Tbsp lemon zest
- 1 cup yogurt
- 0.25 cup lemon juice
- 2 cups flour
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 2 Tbsp flaxmeal
- 1 cup blueberries
- 2 tsp lemon juice
- 1 cup powdered sugar
Cookware
- 1 loaf pan
- 1 parchment paper
- 1 bowl
Instructions - Dough
Step 1
Preheat oven to 350°F. Line a loaf pan with parchment paper.
Step 2
Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and 1/4 cup lemon juice.
Step 3
In a separate bowl, combine flour, baking powder, and baking soda. Add salt.
Step 4
Combine all ingredients and flaxmeal and fold in blueberries.
Step 5
Bake approximately 45 to 50 minutes.
Instructions - Glaze
Step 6
For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
