Lemon Blueberry Bread

๐Ÿง‚ Ingredients

  • ๐Ÿฅฅ 0.75 cups melted coconut oil
  • ๐Ÿฌ 1 cup sugar
  • ๐Ÿฅš 3 eggs
  • ๐Ÿฆ 0.5 tsp vanilla
  • ๐Ÿ‹ 2 Tbsp lemon zest
  • ๐Ÿฆ  1 cup yogurt
  • ๐Ÿ‹ 0.25 cup lemon juice
  • ๐ŸŒพ 2 cups flour
  • ๐Ÿ’จ 1 tsp baking powder
  • ๐Ÿฅค 0.5 tsp baking soda
  • ๐Ÿง‚ 0.5 tsp salt
  • ๐ŸŒพ 2 Tbsp flaxmeal
  • ๐Ÿซ 1 cup blueberries
  • ๐Ÿ‹ 2 tsp lemon juice
  • ๐Ÿฌ 1 cup powdered sugar

  • 1 loaf pan
  • 1 parchment paper
  • 1 bowl

๐Ÿ“ Instructions - Dough

Step 1

Preheat oven to 350ยฐF. Line a loaf pan with parchment paper.

Step 2

Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and ¼ cup lemon juice.

Step 3

In a separate bowl, combine flour, baking powder, and baking soda. Add salt.

Step 4

Combine all ingredients and flaxmeal and fold in blueberries.

Step 5

Bake approximately 45 to 50 minutes.

Step 6

For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
