Lemon Blueberry Bread¶

Ingredients¶
0.75 cups (170 g) melted coconut oil
1 cup (198 g) sugar
3 eggs
0.5 tsp vanilla
2 Tbsp lemon zest
1 cup (227 g) yogurt
0.25 cup lemon juice
2 cups flour
1 tsp baking powder
0.5 tsp baking soda
0.5 tsp salt
2 Tbsp flaxmeal
1 cup blueberries
2 tsp lemon juice
1 cup (198 g) powdered sugar
Cookware¶
- 1 loaf pan
- 1 parchment paper
- 1 bowl
Instructions - Dough¶
Step 1¶
Preheat oven to 350°F. Line a loaf pan with parchment paper.
Step 2¶
Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and ¼ cup lemon juice.
Step 3¶
In a separate bowl, combine flour, baking powder, and baking soda. Add salt.
Step 4¶
Combine all ingredients and flaxmeal and fold in blueberries.
Step 5¶
Bake approximately 45 to 50 minutes.
Instructions - Glaze¶
Step 6¶
For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
