Lemon Blueberry Bread

🧂 Ingredients

  • 🥥 0.75 cups melted coconut oil
  • 🍬 1 cup sugar
  • 🥚 3 eggs
  • 🍦 0.5 tsp vanilla
  • 🍋 2 Tbsp lemon zest
  • 🦠 1 cup yogurt
  • 🍋 0.25 cup lemon juice
  • 🌾 2 cups flour
  • 💨 1 tsp baking powder
  • 🥤 0.5 tsp baking soda
  • 🧂 0.5 tsp salt
  • 🌾 2 Tbsp flaxmeal
  • 🫐 1 cup blueberries
  • 🍋 2 tsp lemon juice
  • 🍬 1 cup powdered sugar

🍳 Cookware

  • 1 loaf pan
  • 1 parchment paper
  • 1 bowl

📝 Instructions - Dough

Step 1

Preheat oven to 350°F. Line a loaf pan with parchment paper.

Step 2

Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and 1/4 cup lemon juice.

Step 3

In a separate bowl, combine flour, baking powder, and baking soda. Add salt.

Step 4

Combine all ingredients and flaxmeal and fold in blueberries.

Step 5

Bake approximately 45 to 50 minutes.

📝 Instructions - Glaze

Step 6

For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
