Lemon Blueberry Bread

🧂 Ingredients

  • 🫒 0.75 cups (170 g) melted coconut oil
  • 🍬 1 cup (156 g) sugar
  • 🥚 3 eggs
  • 🎴 0.5 tsp vanilla
  • 🍊 2 Tbsp (28 g) lemon zest
  • 1 cup yogurt
  • 🍊 0.25 cup (56 g) lemon juice
  • 🍞 2 cups (184 g) flour
  • 🌰 1 tsp baking powder
  • 🌰 0.5 tsp baking soda
  • 🧂 0.5 tsp salt
  • 2 Tbsp flaxmeal
  • 🍎 1 cup (156 g) blueberries
  • 🍊 2 tsp (9 g) lemon juice
  • 🍬 1 cup (200 g) powdered sugar

🍳 Cookware

  • 1 loaf pan
  • 📄 1 parchment paper
  • 1 bowl

📝 Instructions - Dough

Step 1

Preheat oven to 350°F. Line a loaf pan with parchment paper.

Step 2

Combine melted coconut oil, sugar, eggs, vanilla, lemon zest, yogurt, and ¼ cup lemon juice.

Step 3

In a separate bowl, combine flour, baking powder, and baking soda. Add salt.

Step 4

Combine all ingredients and flaxmeal and fold in blueberries.

Step 5

Bake approximately 45 to 50 minutes.

📝 Instructions - Glaze

Step 6

For glaze, whisk together 2 tsp lemon juice and powdered sugar and drizzle over cooled cake.
