Ingredients
- 3 cups warm milk
- 2.25 tsp active dry yeast
- 170 g unsalted butter
- 99 g sugar
- 3 egg yolks
- 2 tsp vanilla
- 1.5 tsp salt
- 480 g all-purpose flour
- 3 egg whites
- some confectioners' sugar

- 1 plastic wrap
Instructions
Step 1
Preheat a waffle iron. Whisk together in a large bowl warm milk (105° to 115°F) and active dry yeast.
Step 2
Let stand until the yeast is dissolved, about 5 minutes, then stir until smooth. Whisk in melted unsalted butter, sugar, egg yolks, vanilla, and salt.
Step 3
Add in 3 additions, beating with a large spoon until smooth after each addition all-purpose flour.
Step 4
Cover tightly with plastic wrap and let rise at room temperature until doubled in volume, 1 to 1.5 hours. Stir to deflate the batter. Beat until soft peaks form, then fold into the batter egg whites.
Step 5
Cook and sprinkle with confectioners' sugar.
