Breakfast Tofu Scramble

Ingredients
120 g onion
1 clove garlic
120 g green pepper
120 g red pepper
180 g mushrooms
16 oz extra-firm tofu
0.25 tsp turmeric
1 tsp cumin
some pepper
some salt

Instructions
Step 1
Add 1/4 cup of water to large saute pan. Once heated, add onion.
Step 2
When the aroma releases from the onion and starts to become translucent, add garlic. Cook for 2 minutes, add green pepper, red pepper and mushrooms and add more water if vegetables are sticking to the pan. Cook for about 4 minutes or until vegetables are tender.
Step 3
Crumble extra-firm tofu with hands and add to pan along with turmeric, mixing well. Add cumin, pepper, and salt, then cook for another 4 to 6 minutes until everything is cooked through.
Step 4
Serve with whole-grain toast or on a warm corn tortilla.
