Ingredients¶
2 peppers
1 onion
1 tsp (2 g) chili-lime seasoning
4 eggs
0.5 cup (113 g) cottage cheese
0.5 can black beans
2 handfuls tortilla chips
some salsa
some sour cream
some cheese
some cilantro
some pico de gallo
some avocado
Cookware¶
- 1 pan
- 1 bowl
Instructions¶
Step 1¶
Sauté chopped peppers and chopped onion in a pan with some chili-lime seasoning.
Step 2¶
Whisk eggs with cottage cheese in a bowl.
Step 3¶
Add the egg mixture to the pan and let it scramble until soft.
Step 4¶
Dump in about half a can of black beans (or pintos) and crumble on a handful or two of tortilla chips.
Step 5¶
Cook it all until the eggs are set to your liking and the chips are a bit soft.
Step 6¶
Top with salsa, sour cream, cheese, cilantro, pico de gallo, and avocado to serve.
