🧂 Ingredients

  • 🌶 2 peppers
  • 🍵 1 onion
  • 🌿 1 tsp (2 g) chili-lime seasoning
  • 🥚 4 eggs
  • 🧀 0.5 cup (113 g) cottage cheese
  • 🫘 0.5 can black beans
  • 🍞 2 handfuls tortilla chips
  • 🍅 some salsa
  • 🥛 some sour cream
  • 🧀 some cheese
  • 🌿 some cilantro
  • 🍅 some pico de gallo
  • 🥑 some avocado

  • 1 pan
  • 1 bowl

📝 Instructions

Step 1

Sauté chopped peppers and chopped onion in a pan with some chili-lime seasoning.

Step 2

Whisk eggs with cottage cheese in a bowl.

Step 3

Add the egg mixture to the pan and let it scramble until soft.

Step 4

Dump in about half a can of black beans (or pintos) and crumble on a handful or two of tortilla chips.

Step 5

Cook it all until the eggs are set to your liking and the chips are a bit soft.

Step 6

Top with salsa, sour cream, cheese, cilantro, pico de gallo, and avocado to serve.
