Tex-Mex Migas¶

Ingredients¶
0.5 onion
1 jalapeño or serrano pepper
2 tbsp butter
6 large eggs
some salt
some black pepper
1 cup (170 g) tortilla chips
1 roma tomato
0.5 cup (56 g) Monterey Jack cheese
some cilantro
some salsa

Instructions¶
Step 1¶
Sauté finely chopped onion and finely chopped jalapeño or serrano pepper in a pan with butter (or oil) until softened.
Step 2¶
Whisk large eggs with a pinch of salt and black pepper in a bowl.
Step 3¶
Add the egg mixture to the pan and cook over medium-low heat, stirring gently.
Step 4¶
When the eggs are about half cooked, fold in crumbled tortilla chips and seeded and diced roma tomato.
Step 5¶
Stir in shredded Monterey Jack cheese until melted.
Step 6¶
Top with fresh cilantro and serve immediately with your favorite salsa.
