📝 Instructions

Step 1

Preheat the oven to 400°F. Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large bowl, whisk together all-purpose flour (120 g), cake flour (90 g), old fashioned oats (198 g), cornstarch (3 g), ground cinnamon (optional), ground nutmeg (optional), baking soda (3 g), baking powder (2 g), and salt (3 g). Set aside.

Step 3

Place cold, cubed unsalted butter (113 g) into the bowl of a stand mixer with the paddle attachment. Turn the mixer on the lowest setting and cream the butter for about 30 seconds.

Step 4

Add brown sugar (107 g) and mix for 30 seconds, followed by granulated sugar (50 g) until incorporated.

Step 5

Add egg, egg yolk, molasses (21 g), and pure vanilla extract (4 g). Blend until mixed, scraping down the sides of the bowl as needed.

Step 6

Keep the mixer on low speed and gradually add the dry ingredients (about ¼ cup at a time).

Step 7

Mix in milk chocolate chips (340 g) until incorporated, then turn off the machine. (If the dough is sticky, chill it in the fridge for a few minutes).

Step 8

Measure out about 6 to 7 large cookies (or smaller if preferred). Roll each into a ball, place on the prepared cookie sheet, and gently press down slightly to flatten.

Step 9

Bake for 9 to 11 minutes. Pull them out before they look fully done. Let them rest on the cookie sheet for 15 minutes before transferring to a cooling rack.

Step 10

Whisk confectioners sugar (113 g), whole milk (21 g), and pure vanilla extract (4 g) together in a medium bowl and drizzle over the cooled cookies.
