Ingredients¶
1.25 cups (150 g) all-purpose flour
0.5 cup (42 g) unsweetened cocoa powder
2 tsp (8 g) baking powder
0.5 tsp (3 g) fleur de sel or kosher salt
0.5 cup (113 g) unsalted butter, chilled and cubed
1.5 cups (320 g) light brown sugar
2 large (100 g) eggs
8 ounces (227 g) extra-bittersweet chocolate (70% cacao, melted and cooled)
1 tsp vanilla extract
0.33 cup (75 g) whole milk
some parchment paper
1.5 cups (170 g) confectioners' sugar
1.5 cups (297 g) granulated sugar
Cookware¶
1 stand mixer
1 bowl
1 baking sheet
1 2-tablespoon cookie scoop
Instructions¶
Step 1¶
Sift together all-purpose flour,
unsweetened cocoa powder,
baking powder, and
fleur de sel or kosher salt; set aside.
Step 2¶
Combine the unsalted butter (chilled and cubed) and
light brown sugar in the bowl of a
stand mixer fitted with a paddle
attachment. Mix on medium speed until light and very fluffy (5 minutes). Scrape the bowl.
Step 3¶
Lower the speed and add the large eggs one at a time, scraping between additions.
Step 4¶
Still on low speed, add the extra-bittersweet chocolate (70% cacao, melted and cooled). Mix until well combined (1
minute). Add the
vanilla extract.
Step 5¶
Staying on low speed, alternate adding the flour mixture and the whole milk. Begin and end with the flour mixture in
three additions, scraping the bowl between additions.
Step 6¶
Transfer the dough (which will be like a wet batter) to a bowl; cover and refrigerate at least overnight (up to 1 week).
Step 7¶
Preheat oven to 350°F. Line a baking sheet with
parchment paper. Put
confectioners' sugar and
granulated sugar in
separate bowls.
Step 8¶
Use a 2-tablespoon cookie scoop to shape the dough into balls. Roll each ball in the
granulated sugar first, then in the
powdered sugar, coating completely.
Step 9¶
Place cookies on the baking sheet 0.5-inch apart. Bake until puffed and cracked and just set around the edges, 14 to 16
minutes (centers will still be soft).
Step 10¶
Cool completely on the baking sheet.
