🧂 Ingredients

  • 1 cup Medjool dates
  • 1 cup hot water
  • 3 Tbsp soaking water
  • 0.33 cup rolled oats
  • 3 Tbsp olive oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.25 cup unsweetened cocoa powder
  • 0.5 tsp sea salt
  • 1 cup dark chocolate chips
  • 0.25 cup dark chocolate chips
  • some sea salt

🍳 Cookware

  • 1 8x8-inch baking pan
  • 1 parchment paper
  • 1 blender or food processor
  • 1 microwave

📝 Instructions

Step 1

Preheat oven to 350°F (180°C) and line an 8x8-inch baking pan with parchment paper. Soak Medjool dates in hot water for 5 minutes to soften.

Step 2

Lift the dates out of the water and put them into the blender or food processor. Add soaking water, rolled oats, olive oil, eggs, vanilla extract, unsweetened cocoa powder, and sea salt. Blend for 1 minute, scrape down the sides, and blend for 1 minute more until completely smooth and creamy.

Step 3

Melt dark chocolate chips in the microwave in 30-second intervals, stirring until smooth. Pour the melted chocolate into the blender and blend for 30 to 60 seconds until fully incorporated.

Step 4

Pour the batter into the prepared pan, top with extra dark chocolate chips and flaky sea salt (optional). Bake for 18 to 22 minutes until the top is set but the center is still soft. Allow to cool completely before slicing.
