Dry Fruit and Nut Energy Bars¶

Ingredients¶
1 cup (149 g) dates
1 cup (227 g) hot water
1 cup (113 g) cashews
1 cup (86 g) almonds
0.5 cup (64 g) walnuts
0.25 cup pistachios
0.25 cup (36 g) sesame seeds
0.25 cup (40 g) pumpkin seeds
0.5 cup (113 g) dry coconut
0.5 cup honey
0.5 tsp cardamom powder
0.25 tsp salt
0.5 cup (56 g) rolled oats

Instructions¶
Step 1¶
Soak dates (pitted) in hot water for 2 hours in a bowl.
Step 2¶
Blend the soaked dates to a smooth paste in a blender without adding any water, then keep aside.
Step 3¶
In a pan on a low flame, roast cashews, almonds, walnuts, pistachios, sesame seeds, and pumpkin seeds until they turn crunchy, about 5 minutes.
Step 4¶
Add dry coconut (grated) and continue to roast, about 2 minutes. Transfer the roasted nuts and coconut to a bowl and keep aside.
Step 5¶
In the same pan, saute the dates paste on a medium flame until it thickens, about 5 minutes.
Step 6¶
Add in the roasted nuts, honey, cardamom powder, and salt. Turn off the flame and mix well until combined.
Step 7¶
In a separate pan on a medium flame, roast rolled oats until aromatic, about 3 minutes.
Step 8¶
Blend the roasted oats to a fine powder in a blender.
Step 9¶
Add the oats powder to the dry fruit and dates mixture. Combine well and keep mixing until the mixture thickens, about 2 minutes.
Step 10¶
Transfer the prepared mixture into a greased plate lined with baking paper and set well forming a block, about 8 minutes.
Step 11¶
Allow to set in the refrigerator for 1 hour.
Step 12¶
Unmould and cut the block into 14 pieces. Serve immediately or store in an airtight container in the refrigerator for up to 1 month.
