  • 🌾 0.75 cup (72 g) almond flour
  • 🌰 0.5 tsp baking soda
  • 🍮 1.5 tsp cinnamon
  • 🌰 0.13 tsp nutmeg
  • 🧂 0.25 tsp salt
  • 🍯 0.25 cup (85 g) maple syrup
  • 🍼 2 Tbsp (32 g) almond butter
  • 🍦 1 tsp vanilla
  • 🥕 1 cup (110 g) grated carrots
  • 🌾 0.5 cup (45 g) rolled oats
  • 🌰 0.25 cup (30 g) chopped walnuts
  • 🍇 0.25 cup (40 g) raisins

  • 1 medium bowl
  • 1 small bowl
  • 1 baking sheet
  • 1 parchment paper

📝 Instructions

Step 1

Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.

Step 3

In a small bowl, whisk together maple syrup, almond butter, and vanilla.

Step 4

Add the wet ingredients to the dry ingredients and stir until well combined.

Step 5

Fold in the grated carrots, rolled oats, walnuts, and raisins.

Step 6

Scoop about 2 tablespoons of dough for each cookie onto the prepared baking sheet. Flatten slightly with your hand.

Step 7

Bake for 12 to 15 minutes, until the edges are lightly browned.

Step 8

Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
