Healthy Carrot Cookies¶

Ingredients¶
0.75 cup (72 g) almond flour
0.5 tsp baking soda
1.5 tsp cinnamon
0.13 tsp nutmeg
0.25 tsp salt
0.25 cup (85 g) maple syrup
2 Tbsp (32 g) almond butter
1 tsp vanilla
1 cup (110 g) grated carrots
0.5 cup (45 g) rolled oats
0.25 cup (30 g) chopped walnuts
0.25 cup (40 g) raisins
Cookware¶
- 1 medium bowl
- 1 small bowl
- 1 baking sheet
- 1 parchment paper
Instructions¶
Step 1¶
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step 2¶
In a medium bowl, mix almond flour, baking soda, cinnamon, nutmeg, and salt.
Step 3¶
In a small bowl, whisk together maple syrup, almond butter, and vanilla.
Step 4¶
Add the wet ingredients to the dry ingredients and stir until well combined.
Step 5¶
Fold in the grated carrots, rolled oats, walnuts, and raisins.
Step 6¶
Scoop about 2 tablespoons of dough for each cookie onto the prepared baking sheet. Flatten slightly with your hand.
Step 7¶
Bake for 12 to 15 minutes, until the edges are lightly browned.
Step 8¶
Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
