Healthy Peanut Butter Bars¶

Ingredients¶
1.5 cups (148 g) rolled oats
1 cup (135 g) peanut butter
3 Tbsp (63 g) honey
3 Tbsp (42 g) butter
1 tsp (5 g) vanilla extract
1 generous pinch sea salt
1 cup (177 g) dark chocolate chips
some sea salt

Instructions¶
Step 1¶
Add rolled oats to a blender or food processor and blend into a fine flour, about 2 to 3 minutes.
Step 2¶
In a bowl, stir together the blended oats (or oat flour), creamy peanut butter, honey (or maple syrup), melted butter, vanilla extract, and sea salt until thick and fudgy.
Step 3¶
Line an 8x8-inch baking pan (or baking dish) with parchment paper. Press the mixture firmly into the pan, spreading it with the back of a spoon.
Step 4¶
Melt dark chocolate chips in the microwave in 30-second bursts, stirring often, until smooth. Pour over the peanut butter layer and spread evenly. Sprinkle with sea salt right away.
Step 5¶
Freeze for about 1 hour, or until firm. Let the pan sit at room temperature for a couple of minutes, then slice into squares or bars. Store them in the freezer for an easy grab-and-go snack.
