Apple Cake¶

Ingredients - Cake¶
2.5 cups (313 g) all-purpose flour
2 tsp baking powder
0.75 tsp baking soda
0.5 tsp salt
2 tsp ground cinnamon
0.5 tsp ground nutmeg
0.25 tsp ground ginger
0.25 tsp ground allspice
1 cup (240 g) vegetable oil
1 cup (200 g) granulated sugar
0.5 cup (100 g) light or dark brown sugar (packed)
1 cup (240 g) unsweetened applesauce
4 large (200 g) eggs
1 tsp vanilla extract
2 Tbsp (30 g) orange juice
3 cups (360 g) apples (peeled & chopped into ½-inch chunks)

0.25 cup (56 g) unsalted butter
1 cup (200 g) light or dark brown sugar (packed)
0.5 cup (120 g) heavy whipping cream
Small pinch salt
0.5 cup (60 g) confectioner’s sugar (sifted)

Instructions¶
Step 1¶
Prep: Preheat the oven to 350°F (177°C) and grease a 9×13-inch baking pan.
Step 2¶
Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and allspice. Set aside.
Step 3¶
Mix Wet Ingredients: In a medium bowl, whisk the oil, granulated sugar, brown sugar, applesauce, eggs, vanilla extract, and orange juice.
Step 4¶
Combine: Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the chopped apples.
Step 5¶
Bake: Spread the batter evenly into the prepared pan. Bake for 45–50 minutes. Around the 30-minute mark, loosely tent the pan with aluminum foil to prevent over-browning. The cake is done when a toothpick inserted in the center comes out clean.
Step 6¶
Cool: Remove from the oven and set on a wire rack to cool for at least 30 minutes.
Step 7¶
Topping (Optional): - Dusting: Right before serving, dust with 2 Tablespoons (15g) of confectioners’ sugar. - Glaze: Combine butter, brown sugar, heavy cream, and salt in a saucepan over medium heat. Stir constantly until butter melts, then bring to a rapid boil for 1 minute. Reduce heat to low and simmer for 1 minute. Remove from heat and whisk in the sifted confectioners’ sugar. Let the glaze cool and thicken for 20 minutes before spooning over the cake.

Serve: Serve warm or at room temperature. Store leftovers at room temperature for 2 days or refrigerated for up to 5 days.
