Nigella Lawson's Chocolate Guinness Cake¶

Ingredients¶
some parchment paper
250 ml Guinness
250 g unsalted butter
75 g unsweetened cocoa powder
400 g caster sugar
150 ml sour cream
2 large eggs
1 tablespoon vanilla extract
275 g all-purpose flour
2.5 teaspoons baking soda
300 g cream cheese
150 g confectioners' sugar
125 ml heavy cream

- 1 large wide saucepan
- 1 bowl
- 1 rack
- 1 platter
Instructions¶
Step 1¶
Preheat oven to 350°F (180°C). Butter and line a 9-inch springform pan with parchment paper.
Step 2¶
Pour the Guinness into a large wide saucepan, add the unsalted butter (sliced) and heat until the butter has melted.
Step 3¶
Whisk in the unsweetened cocoa powder and caster sugar.
Step 4¶
In a separate bowl, whisk the sour cream with the large eggs and vanilla extract, then pour into the beer-and-butter mixture.

Whisk in the all-purpose flour and baking soda.
Step 6¶
Pour the cake batter into the prepared pan and bake for 45 minutes to 1 hour (until a skewer comes out clean).
Step 7¶
Leave to cool completely in the pan on a rack, as it is quite a damp cake.
Step 8¶
To make the frosting: Lightly whip the cream cheese (room temperature) until smooth, sift over the confectioners' sugar and then whisk them together.
Step 9¶
Add the heavy cream and whisk again until it reaches a spreadable consistency.
Step 10¶
Remove the cake from the pan and place on a platter. Ice the top of the cake so that it resembles the frothy head on a pint of Guinness.
