  • 🧈 250 g unsalted butter
  • 🌰 75 g unsweetened cocoa powder
  • 🍬 400 g caster sugar
  • 🍼 150 ml sour cream
  • 🥚 2 large eggs
  • 🎴 1 tablespoon vanilla extract
  • 🍞 275 g all-purpose flour
  • 🌰 2.5 teaspoons baking soda
  • 🧀 300 g cream cheese
  • 🍬 150 g confectioners' sugar
  • 🥛 125 ml heavy cream

  • 1 9-inch springform pan
  • 1 large wide saucepan
  • 1 bowl
  • 1 rack
  • 1 platter

📝 Instructions

Step 1

Preheat oven to 350°F (180°C). Butter and line a 9-inch springform pan with parchment paper.

Step 2

Pour the Guinness into a large wide saucepan, add the unsalted butter (sliced) and heat until the butter has melted.

Step 3

Whisk in the unsweetened cocoa powder and caster sugar.

Step 4

In a separate bowl, whisk the sour cream with the large eggs and vanilla extract, then pour into the beer-and-butter mixture.

Step 5

Whisk in the all-purpose flour and baking soda.

Step 6

Pour the cake batter into the prepared pan and bake for 45 minutes to 1 hour (until a skewer comes out clean).

Step 7

Leave to cool completely in the pan on a rack, as it is quite a damp cake.

Step 8

To make the frosting: Lightly whip the cream cheese (room temperature) until smooth, sift over the confectioners' sugar and then whisk them together.

Step 9

Add the heavy cream and whisk again until it reaches a spreadable consistency.

Step 10

Remove the cake from the pan and place on a platter. Ice the top of the cake so that it resembles the frothy head on a pint of Guinness.
