| 12 | 45 minutes |
Ingredients¶
- 1.5 cups all-purpose flour
- 0.25 tsp salt
- 0.5 tsp baking soda
- 1.5 tsp baking powder
- 1 cup sugar
- 0.5 cups neutral oil (such as grapeseed or avocado)
- 2 eggs
- 0.5 cup buttermilk
- 2 tsp vanilla extract
- 2 cake pans
- 8 oz cream cheese
- 0.5 cups sugar
- 0.67 cups heavy cream
- 1 pinch sea salt
- 1 tsp vanilla
Cookware¶
Instructions¶
Step 1¶
Preheat your oven to 350°F.
Step 2¶
In a large bowl, whisk together the all-purpose flour, salt, baking soda, baking powder, and sugar.
Step 3¶
Add the neutral oil (such as grapeseed or avocado), lightly beaten eggs, buttermilk plus 2 tablespoons, and vanilla extract. Stir until just combined.
Step 4¶
Coat two 6-inch cake pans (or one 9-inch pan) with nonstick spray or butter. For best results, line the bottoms with parchment paper. Pour the batter evenly into the pans.
Step 5¶
Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean.
Step 6¶
Cool in the pans for 15 minutes, then invert onto a cooling rack to cool completely before frosting.
Step 7¶
To make the frosting, beat the cream cheese and sugar together until light and fluffy.
Step 8¶
Add the heavy cream, sea salt, and vanilla. Beat again until the mixture is thick, light, and fluffy.
Step 9¶
If using two 6-inch cakes, cut each cake in half crosswise to create four thin layers. Stack the layers, spreading frosting between each one. Use the remaining frosting to cover the top and sides of the cake. Decorate with sprinkles and candles as desired.
