Whole Orange Almond Cake¶

Ingredients¶
2 large oranges
6 eggs
1.5 cups (126 g) ground almonds
1 pinch salt
1 cup (198 g) sugar
1 teaspoon baking powder
some thin slices of peeled orange
some confectioners' sugar
some cinnamon
some fresh raspberries
some whipped cream
Cookware¶
- 1 deep 9-inch cake pan
- 1 large pot
- 1 blender or food processor
- 1 bowl
- 1 rack
- 1 serving dish
Instructions¶
Step 1¶
Preheat oven to 400°F.
Step 2¶
Butter and flour a deep 9-inch cake pan.
Step 3¶
Bring a large pot of salted water to a boil.
Step 4¶
Wash 2 large oranges (preferably seedless navels) and place them in the boiling water; cover the pot.
Step 5¶
Boil until very soft, about 30 minutes.
Step 6¶
Drain, cool, and cut into quarters, removing any seeds.
Step 7¶
Process the oranges to a fairly fine purée in a blender or food processor (or use a meat grinder).
Step 8¶
Beat 6 eggs in a bowl until thick.
Step 9¶
Add 1.5 cups (126 g) ground almonds, 1 pinch salt, 1 cup (198 g) sugar, 1 teaspoon baking powder, and orange purée. Mix well.
Step 10¶
Pour into the prepared cake pan and bake for 1 hour, or until the cake is firm to the touch when pressed with the tip of your finger.
Step 11¶
Remove the pan to a rack and allow the cake to cool.
Step 12¶
Turn it out of the pan into a serving dish.
Step 13¶
Serve garnished with thin slices of peeled orange sprinkled with confectioners' sugar and a touch of cinnamon, or fresh raspberries.

Serve with whipped cream.
