Old-Fashioned Rice Pudding

🧂 Ingredients

  • 🥛 6 cups (1362 g) milk
  • 🍬 0.5 cup (99 g) granulated sugar
  • 🧂 0.5 tsp salt
  • 🍞 0.5 cup (99 g) long grain white rice
  • 🎴 2 tsp vanilla
  • 🌰 some cinnamon (optional)
  • 🍫 3 Tbsp (38 g) cocoa powder (optional)
  • 🥬 ¼ cup (42 g) raisins (optional)
  • 🥛 3 cups (681 g) milk
  • 🍬 0.25 cup (50 g) granulated sugar
  • 🧂 0.25 tsp salt
  • 🍞 0.25 cup (50 g) long grain white rice
  • 🎴 1 tsp vanilla
  • 🌰 some cinnamon (optional)
  • 🍫 1.5 Tbsp (19 g) cocoa powder (optional)
  • 🥬 2 Tbsp (21 g) raisins (optional)

  • 🥘 1 large saucepan

📝 Instructions

Step 1

In a large saucepan, combine 5 ½ cups milk, granulated sugar, and salt. Bring to a boil over medium-high heat.

Step 2

Stir in long grain white rice and reduce heat to low. Be sure to adjust the heat so that it is at a gentle simmer.

Step 3

Stirring occasionally, cook for 50 to 60 minutes. Mixture should thicken up to consistency of yogurt.

Step 4

Once thickened, remove from heat and stir in vanilla.

Step 5

Let cool and then refrigerate. The last ½ cup milk is stirred in just before serving. Sprinkle with cinnamon (optional) if desired.

Variation

To make Chocolate Rice Pudding, add 3 Tbsp cocoa to the milk.

Variation

Add ¼ cup of raisins when cooking the rice.
