Plum Torte

Ingredients
- 1 cup granulated sugar
- 0.5 cup unsalted butter
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 pinch salt
- 2 eggs
- 5 plums
- some lemon juice
- 1 tsp cinnamon
- some whipped cream (optional)

- 1 bowl
- 1 springform pan
Instructions
Step 1
Heat oven to 350°F.
Step 2
Cream the granulated sugar and unsalted butter in a bowl. Add the all-purpose flour, baking powder, salt, and eggs and beat well.
Step 3
Spoon the batter into a springform pan of 8, 9, or 10 inches. Place the plum halves, skin side up, on top of the batter. Sprinkle lightly with granulated sugar and lemon juice, depending on the sweetness of the fruit. Sprinkle with about 1 tsp of cinnamon, depending on how much you like cinnamon.
Step 4
Bake for 1 hour, approximately. Remove and cool; refrigerate or freeze, if desired. Or cool to lukewarm and serve plain or with whipped cream (optional).
Tip
To serve a torte that was frozen, defrost and reheat it briefly at 300°F.
Variation
Massage lemon zest into the sugar, sprinkle with Demerara or turbinado on top, and use brown butter cooled in an ice bath.
