Jiffy Corn Casserole¶

Ingredients¶
1 cup butter
2 cans whole kernel corn, drained
2 cans cream-style corn
2 cups sour cream
4 eggs
2 boxes Jiffy corn muffin mix
some salt
some pepper
Cookware¶
- 1 casserole dish
- 1 mixing bowl
Instructions¶
Step 1¶
Preheat oven to 375°F.
Step 2¶
Grease a casserole dish, and pour melted butter, whole kernel corn, drained, and cream-style corn into a mixing bowl. Mix in sour cream.
Step 3¶
In a separate bowl, beat eggs and stir into corn and sour cream. Add Jiffy corn muffin mix and blend thoroughly.
Step 4¶
Season with salt and pepper to taste.
Tip
Found that ¾ tsp pepper and 2 tsp salt works well.
Step 5¶
Bake 35 to 45 minutes.
