Pumpkin Squares¶

Ingredients¶
Cake¶
0.5 cup butter
0.5 cup sugar
0.5 cup brown sugar
2 eggs
1 14-oz can pumpkin
1 cup flour
1 tsp cinnamon
0.25 tsp nutmeg
0.25 tsp ginger
1 tsp baking powder
0.5 tsp baking soda
0.25 tsp salt
Cream Cheese Frosting¶
4 oz softened cream cheese
0.25 cup butter
1 tsp vanilla
2 cups sugar
Cookware¶
- 1 stand mixer
- 1 9 x 13" pan
Instructions¶
Cake¶
Step 1¶
Preheat oven to 350°F.
Step 2¶
In a stand mixer, Cream butter and sugar. Beat in brown sugar and eggs one at a time.
Step 3¶
Slowly beat in pumpkin. Add flour, cinnamon, nutmeg, ginger, baking powder, baking soda, and salt and stir.
Step 4¶
Scrape into 9 x 13" pan.
Step 5¶
Bake for 25 minutes. Cool, then frost with cream cheese icing.
Cream Cheese Frosting¶
Step 6¶
Beat in softened cream cheese, butter, and vanilla, then beat in sugar.
Step 7¶
Spread then chill.
