Lentils are small, lens-shaped legumes available in various colors and textures.
Varieties¶

- Green Lentils: Firm texture, peppery flavor.
- Red/Yellow Lentils: Break down when cooked, great for thickening soups and dals.
- Black (Beluga) Lentils: Small, firm, and shiny.
Storage¶
- Store dried lentils in a cool, dry place for up to a year.
- Cooked lentils last 3-5 days in the refrigerator.
