Sun-Dried Tomatoes¶

Ingredients¶
- 3 cups cherry tomatoes
- some extra-virgin olive oil
- some sea salt
- some freshly ground black pepper
- some thyme sprigs
Cookware¶
- 1 large baking sheet
Instructions¶
Step 1¶
Preheat the oven to 250°F. Line a large baking sheet with parchment paper.
Step 2¶
Place the halved cherry tomatoes cut side up on the baking sheet.
Step 3¶
Drizzle with extra-virgin olive oil and sprinkle with sea salt, freshly ground black pepper, and fresh thyme sprigs (optional).
Step 4¶
Roast the tomatoes for 2.5 hours to 3 hours until they are well shriveled around the edges.
