Vegetable Broth

Ingredients
3 Tbsp butter
1 cup onion
1 cup celery
1 cup turnip
1 cup carrot
4 cups boiling water
some salt
some pepper
1 Tbsp soy sauce

- 1 large saucepan
Instructions
Step 1
Serve strained or unstrained, hot or cold.
Step 2
Melt in a large saucepan over medium heat butter.
Step 3
Add and cook gently for 5 minutes 3 cups or more chopped vegetables for stock such as onion, celery, turnip, and carrot.
Step 4
Do not let the vegetables brown. Add 4 cups of boiling water or a combination of boiling water and tomatoes or tomato juice.
Step 5
Simmer the broth, partially covered, 1 hour. Season to taste with salt, pepper, and soy sauce.
