Bruschetta¶

Ingredients¶
1.5 cups (270 g) chopped roma tomatoes
2 tbsp diced red onion
4 large cloves garlic
2 tbsp chopped fresh basil
0.5 tbsp olive oil
0.5 tsp red wine vinegar
0.25 tsp salt
1 dash ground black pepper
0.5 loaf french baguette or crusty italian bread
1.5 tbsp olive oil
0.25 tsp garlic salt
2 sprigs italian parsley
Cookware¶
- 1 medium bowl
- 1 broiler
- 1 small bowl
- 1 plate
Instructions¶
Step 1¶
In a medium bowl, combine chopped roma tomatoes, diced red onion, garlic (minced) and chopped fresh basil. Add olive oil, red wine vinegar, salt and ground black pepper and mix well. Cover bowl and refrigerate for at least 1 hour.
Step 2¶
Preheat broiler. Slice french baguette or crusty italian bread diagonally into 5-7 slices.
Step 3¶
In a small bowl, combine remaining olive oil with garlic salt. Brush entire surface of each slice (both sides) with the olive oil mixture.
Step 4¶
Broil slices for 1.5 minutes to 2 minutes on each side, until surface starts to brown.
Step 5¶
Arrange bread like spokes of a wheel on a plate. Pile tomato mixture in the middle of the slices. Garnish with italian parsley.
