Cauliflower Green Bean Mac and Cheese

🧂 Ingredients

  • 🍎 1 Tbsp apple cider vinegar
  • 🌰 1 tsp cumin
  • 🍛 1 tsp garam masala
  • 🍛 0.5 tsp turmeric
  • 🍠 0.25 tsp ground ginger
  • 🧂 0.5 tsp salt
  • 🫘 8 oz green beans
  • 🥦 1 pkg cauliflower florets
  • 🌾 1 12-oz pkg red lentil pasta
  • 🌰 3 Tbsp toasted crushed almonds
  • 🍎 0.25 cup (37 g) raisins
  • 🌿 some cilantro

🍳 Cookware

  • 🥣 1 large bowl
  • 🍪 1 baking sheet

📝 Instructions

Step 1

Preheat oven to 425°F.

Step 2

In a large bowl, mix together apple cider vinegar, cumin, garam masala, turmeric, ground ginger, and salt. Add 1 Tbsp water, then toss mixture over green beans, and cauliflower florets. Mix to coat. Place on a baking sheet and roast 20 to 25 minutes.

Step 3

Meanwhile, prepare red lentil pasta, reserving 1 cup of cooked pasta water. Add FOK White Mac and Cheese sauce and pasta water to thin.

Step 4

Add veggies, toasted crushed almonds, and raisins and mix together. Top with chopped cilantro
