Creamy Spiced Red Lentil & Cauliflower Dal¶

Ingredients¶
2 cups (420 g) dried red lentils
1 small head cauliflower
1 onion
4 cloves garlic
1 Tbsp (14 g) fresh ginger
1 can (14 oz) diced tomatoes
4 cups (908 g) vegetable broth
1 Tbsp (10 g) curry powder
1 tsp (3 g) turmeric
1 tsp (3 g) ground cumin
0.5 tsp (1 g) coriander
fresh cilantro
lime juice

Instructions¶
Step 1¶
Place dried red lentils (rinsed), cauliflower (chopped into florets), onion (diced), garlic (minced), fresh ginger (grated), diced tomatoes, vegetable broth, curry powder, turmeric, ground cumin, and coriander into the slow cooker. Stir to combine.
Step 2¶
Cover and cook on Low for 4 to 5 hours or High for 2 to 3 hours. The lentils should be completely disintegrated and the cauliflower tender.
Step 3¶
Stir vigorously to cream the lentils further.
Step 4¶
Stir in fresh cilantro and lime juice right before serving.
