Garlic Bread Grilled Cheese

🧂 Ingredients

  • 🧈 4 tbsp salted butter
  • 🧀 ¼ cup Parmesan, grated
  • 🌿 1 tbsp fresh parsley, finely chopped (or ½ tsp dried, optional)
  • 🧄 1 tsp garlic, grated (from 1–2 cloves)
  • 🍞 4 slices sandwich bread (white or sourdough, about ¾-inch thick)
  • 🧀 ¾ cup (3 oz) low-moisture mozzarella, shredded

  • 1 large nonstick skillet
  • 1 small microwave-safe bowl

📝 Instructions

Step 1

Microwave butter in a small microwave-safe bowl until partially melted, 10–15 seconds. Add Parmesan, parsley, and grated garlic. Stir to combine — mixture should be spreadable, not liquid.

Step 2

Spread an even layer of garlic butter over both sides of 2 slices of bread (about ½ tbsp per side). Place the slices in a large nonstick skillet and top each with an even layer of mozzarella (about ⅓ cup each). Butter both sides of the remaining 2 slices of bread and place on top to create 2 sandwiches.

Step 3

Place the skillet over medium-low heat and cook until the mozzarella is mostly melted and the underside is deep golden, 3–4 minutes. Flip and cook until the other side is deep golden and cheese is completely melted, 2–3 minutes more. Cut in half if desired and serve immediately.

[!TIP] Salted butter can be substituted with 4 tbsp unsalted butter plus ⅛ tsp kosher salt.
