Ginger Sesame Vegan Meatballs

🧂 Ingredients - Meatballs

  • 🍄 8 oz mushrooms
  • 🧅 0.5 cup chopped onion
  • 🥫 1 can black beans
  • 🧄 4 cloves garlic
  • 🧅 3 stalks green onion
  • 🍠 2.5 Tbsp ginger
  • 🥡 2 Tbsp tamari
  • 🍞 0.5 cup breadcrumbs
  • 🌱 1 Tbsp flaxseed meal
  • 💧 3 Tbsp water
  • 🫒 1 Tbsp toasted sesame oil

🧂 Ingredients - Glaze

  • 🥡 0.25 cup tamari
  • 🍯 2 Tbsp maple syrup
  • 🍠 1 Tbsp ginger
  • 🧄 1 clove garlic
  • 🫒 1 tsp toasted sesame oil
  • 🌶 1 tsp sriracha

🍳 Cookware

  • 1 small bowl
  • 1 large skillet
  • 1 kitchen towel
  • 1 food processor
  • 1 baking sheet

📝 Instructions

Step 1

In a small bowl, mix flaxseed meal and water. Let sit for 5 minutes.

Step 2

Finely chop mushrooms and onion. Sauté in a large skillet over medium heat until softened and moisture has evaporated.

Step 3

Drain and rinse the black beans, then dry in a clean kitchen towel.

Step 4

To the sautéed mushrooms, add the black beans, garlic, green onion, ginger, and tamari (or soy sauce or coconut aminos). Sauté for 3 to 4 minutes, or until slightly softened, stirring frequently. Set aside to cool slightly.

Step 5

In a food processor, pulse the mushroom and bean mixture until it forms a coarse paste. Do not overprocess.

Step 6

Transfer to a bowl and stir in flax egg and breadcrumbs. Let sit for 10 minutes.

Step 7

Preheat oven to 375°F (200°C). Form mixture into 16 meatballs and place on a baking sheet.

Step 8

Bake for 20 to 25 minutes until firm and browned.

Step 9

Whisk glaze ingredients together in a small saucepan over medium heat until thickened.

Step 10

Toss meatballs in glaze before serving.
