Ingredients¶
4 cups (680 g) cooked brown rice
4 cups (800 g) cooked sweet potato
1 15-oz can black beans
2 cups (285 g) bell pepper
6 cups (180 g) raw spinach or kale
1.5 cups (255 g) fresh or frozen mango chunks
4 Tbsp (25 g) flax seed meal
4 Tbsp red wine vinegar
1 Tbsp chopped shallot
1 tsp Dijon mustard
1 tsp salt
0.5 cup (115 g) water
2 Tbsp maple syrup

Instructions¶
Step 1¶
In a large bowl, mix together cooked brown rice, cooked sweet potato, black beans, chopped bell pepper, and raw spinach or kale.
Step 2¶
In a blender, combine fresh or frozen mango chunks, flax seed meal, red wine vinegar, chopped shallot, Dijon mustard, salt, water, and maple syrup.
Step 3¶
Puree until very smooth. Pour over rice and bean mixture. Combine well and serve.
