Greens and Grains Bowls¶

Ingredients¶
4 cups (680 g) cooked brown rice
4 cups (680 g) cooked sweet potato
1 15-oz can black beans
2 cups (284 g) chopped bell pepper
6 cups (1188 g) raw spinach or kale
1 avocado
some cilantro
some lime wedges
some creamy tahini dressing

Instructions¶
Step 1¶
In a large bowl, mix together cooked brown rice, cooked sweet potato, black beans, chopped bell pepper, and raw spinach or kale.
Step 2¶
Divide the mixture between 4 bowls.
Step 3¶
Top each bowl with sliced avocado and fresh cilantro.
Step 4¶
Serve with lime wedges and creamy tahini dressing.
