🧂 Ingredients

  • 🫘 2 15-oz cans red beans
  • 🧅 1 cup (142 g) onion, finely chopped
  • 🌶 1 cup (142 g) chopped green pepper
  • 🥬 1 cup (142 g) chopped celery
  • 🌿 2 tsp thyme
  • 🧄 3 cloves garlic
  • 🍲 2.33 cups (530 g) vegetable broth
  • 🌿 1 bay leaf
  • 🌶 1 tsp smoked paprika
  • 🌶 0.25 tsp cayenne
  • 🧂 some salt
  • 🧂 some pepper

📝 Instructions

Step 1

Place red beans, onion, finely chopped, chopped green pepper, chopped celery, thyme, garlic, vegetable broth, bay leaf, smoke paprika, and cayenne in a slow cooker.

Step 2

Cook on low for 4 to 5 hours.

Step 3

Stir in rice. Add salt and pepper to taste.

Step 4

Increase heat to high and cook 1 to 2 hours more.

Step 5

Note: For brown rice, cook 2 more hours beyond the initial 4 to 5 hours.
