🧂 Ingredients

  • 2 tsp taco seasoning
  • 🌿 0.5 tsp oregano
  • 🌰 1 tsp (3 g) cumin
  • 🍵 1 small onion
  • 🧄 2 cloves minced garlic
  • 🫒 some olive oil
  • 🌾 2.5 cups (538 g) cooked lentils
  • 3 Tbsp Tomato Paste
  • 💧 2 Tbsp (28 g) hot sauce
  • 12 hard taco shells
  • 🧀 some pepper jack cheese
  • 🧀 some shredded lettuce
  • 🌿 some cilantro

🍳 Cookware

  • 1 skillet
  • 🥄 1 potato masher

📝 Instructions

Step 1

Combine taco seasoning, oregano, cumin. In skillet, sauté onion and minced garlic with olive oil.

Step 2

Add spice blend and set aside. Lower heat to medium, add cooked lentils and a splash of water, Tomato Paste, and hot sauce.

Step 3

Use potato masher to mash mixture. Continue cooking for 5 minutes, adding water as needed.

Step 4

Fill hard taco shells with lentil mixture and top with shredded pepper jack cheese.

Step 5

Bake 10 to 15 minutes at 400°F. Top with shredded lettuce, cilantro, and favorite topping.
