🧂 Ingredients

  • 🫒 2 Tbsp (25 g) olive oil
  • 🍼 1 pkg vegan sausage (13 oz)
  • 🌿 1 Tbsp (5 g) Cajun seasoning
  • 🫒 1 Tbsp (12 g) olive oil
  • 🌱 1 large yellow onion
  • 🌶 1 green bell pepper
  • 🌶 1 red bell pepper
  • 🥬 3 stalks celery
  • 🧄 6 cloves garlic
  • 🌿 1 Tbsp (5 g) Cajun seasoning
  • 🧂 1 tsp salt
  • 🌶 0.25 tsp cayenne pepper
  • 🌿 1 tsp (3 g) dried thyme
  • 🌶 14 oz (248 g) crushed tomatoes
  • 🍎 2 tsp (9 g) vegan Worcestershire sauce
  • 🍞 1.5 cups (297 g) long grain white rice
  • 💧 2.75 cups (624 g) water
  • 🍊 1 cup okra
  • 🌿 1 Tbsp (5 g) Cajun seasoning
  • 🧂 some salt
  • 🌿 some fresh parsley
  • 🫘 some green onions

📝 Instructions

Step 1

In a large pot or pan, add olive oil (divided) and warm over medium-high heat. Add sliced vegan sausage (13 oz) (Field Roast Italian or similar) and Cajun seasoning (divided) and sauté for 3 minutes to 4 minutes, until browned and warm. Transfer to a clean plate and set aside.

Step 2

To the same pot, add the remaining olive oil and chopped yellow onion, diced green bell pepper, diced red bell pepper, and chopped celery. Sauté for 5 minutes to 7 minutes, stirring frequently.

Step 3

Add minced garlic, another Cajun seasoning, salt (omit if your Cajun seasoning contains salt), cayenne pepper (optional), and dried thyme. Stir and cook for 1 minute.

Step 4

Add crushed tomatoes (1 can), vegan Worcestershire sauce, uncooked long grain white rice, and water to the pot. Stir well, bring to a boil, then lower the heat to a simmer (covered) and cook for 25 minutes to 30 minutes, until the rice is cooked. Stir every 5 minutes to make sure the rice doesn't burn and stick to the bottom of the pot. Add a little more water as needed if the mixture starts to dry out.

Step 5

Stir in thinly sliced okra (optional). Add the cooked sausage back to the pot and mix well. Taste and season with another Cajun seasoning (optional) and additional salt and pepper to taste. Remove from heat.

Step 6

Serve sprinkled with chopped fresh parsley and green onions and enjoy!
