Balsamic Lentil Sauté

Ingredients
- 0.5 medium red onion
- 1 Tbsp olive oil
- 2 cloves garlic
- 2 handfuls spinach
- 1 medium bell pepper
- 0.5 package lentils
- 2 Tbsp sun-dried tomatoes
- 2 Tbsp parsley
- 2 Tbsp balsamic glaze
- 1 pouch brown rice
Cookware
- 1 large skillet
- 1 plates
- 1 ladle
Instructions
Step 1
Add red onion to a large skillet on medium heat then stir in olive oil and garlic. Add spinach and bell pepper and cook until spinach begins to wilt.
Step 2
Empty half the package of lentils into the mix and then add sun-dried tomatoes. Heat and stir another 2 minutes and then mix in the parsley and balsamic glaze.
Step 3
Divide brown rice onto individual plates and ladle sauté over each serving. 28 minutes
