Balsamic Lentil Sauté

🧂 Ingredients

  • 🧅 0.5 medium red onion
  • 🫒 1 Tbsp olive oil
  • 🧄 2 cloves garlic
  • 🥬 2 handfuls spinach
  • 🫑 1 medium bell pepper
  • 🌾 0.5 package lentils
  • 🍅 2 Tbsp sun-dried tomatoes
  • 🌿 2 Tbsp parsley
  • 🍶 2 Tbsp balsamic glaze
  • 🍚 1 pouch brown rice

  • 1 large skillet
  • 1 plates
  • 1 ladle

📝 Instructions

Step 1

Add red onion to a large skillet on medium heat then stir in olive oil and garlic. Add spinach and bell pepper and cook until spinach begins to wilt.

Step 2

Empty half the package of lentils into the mix and then add sun-dried tomatoes. Heat and stir another 2 minutes and then mix in the parsley and balsamic glaze.

Step 3

Divide brown rice onto individual plates and ladle sauté over each serving. 28 minutes
