Chipotle-Inspired Vegan Burrito Bowls

Ingredients
- 1 bag frozen brown rice
- 2 Tbsp olive oil
- some salt
- 1 lime zest
- 1 lime juice
- 1 bunch cilantro
- 0.5 tsp chili powder
- 0.5 tsp chipotle powder
- 1 14-oz block extra-firm tofu
- 1 15-oz can corn
- 1 15-oz black beans
- 0.5 tsp chipotle powder
- 0.5 tsp chili powder
- 1 Tbsp olive oil
- 1 bunch cilantro
- some pico de gallo
- some guacamole
Instructions
Step 1
Heat frozen brown rice according to package instructions, then sauté in olive oil and salt to taste.
Step 2
Add zest and juice of 1 lime and bunch of cilantro. Mix 1/2 tsp chili powder and 1/2 tsp chipotle powder to extra-firm tofu.
Step 3
Add corn, black beans, 1/2 tsp chipotle powder, and 1/2 tsp of chili powder. Sauté with olive oil over medium heat.
Step 4
Build bowls starting with rice, then corn and beans, then tofu. Top with cilantro, pico de gallo, and guacamole.
