Taco Bake¶

Ingredients¶
2 tsp taco seasoning
0.5 tsp oregano
1 tsp cumin
1 small onion
2 cloves minced garlic
some olive oil
2.5 cups cooked lentils
3 Tbsp tomato paste
2 Tbsp hot sauce
12 hard taco shells
some pepper jack cheese
some shredded lettuce
some cilantro
Cookware¶
- 1 skillet
- 1 potato masher
Instructions¶
Step 1¶
Combine taco seasoning, oregano, cumin. In skillet, sauté onion and minced garlic with olive oil.
Step 2¶
Add spice blend and set aside. Lower heat to medium, add cooked lentils and a splash of water, tomato paste, and hot sauce.
Step 3¶
Use potato masher to mash mixture. Continue cooking for 5 minutes, adding water as needed.
Step 4¶
Fill hard taco shells with lentil mixture and top with shredded pepper jack cheese.
Step 5¶
Bake 10 to 15 minutes at 400°F. Top with shredded lettuce, cilantro, and favorite topping.
