Applied Homemade Vegetarian Gravy¶

Ingredients¶
1 stick unsalted butter
1 cup onion
0.5 cups celery
0.5 cup carrot
3 cloves garlic
0.75 cup all-purpose flour
6 cups vegetable broth
some salt
some pepper

Instructions¶
Step 1¶
Heat a saute pan over medium heat.
Step 2¶
Add unsalted butter, minced onion, minced celery, minced carrot, and sliced garlic to the pan.
Step 3¶
Cook gently (sweat) for 2 minutes until the vegetables soften.
Step 4¶
Stir in the all-purpose flour and cook for an additional 4 minutes, or until the roux turns a light brown color.
Step 5¶
Gradually add the vegetable broth while stirring to avoid lumps.
Step 6¶
Simmer the gravy for 5 minutes, allowing it to thicken.
Step 7¶
Season with salt and pepper to taste.
Step 8¶
If desired, finish by stirring in about 1 Tbsp of your favorite combination of freshly chopped herbs.
Step 9¶
Storage: keeps well in the refrigerator for up to 5 days or can be frozen for 2-3 months.
