Asian Sweet-&-Sour Sauce¶

Ingredients¶
Sauce¶
2 Tbsp butter
1 cup vegetable stock or broth
1 cup green bell peppers
6 slices canned pineapple
0.75 cup pineapple juice
0.5 cup rice vinegar
0.5 cup sugar
0.5 tsp salt
0.25 tsp ginger
Thickener¶
2 Tbsp cornstarch
0.5 cup vegetable stock or broth
2 Tbsp soy sauce
Cookware¶
- 1 medium heavy saucepan
- 1 small bowl
Instructions¶
Step 1¶
Serve over a dish of chicken, vegetables, and rice. Melt in a medium heavy saucepan 2 Tbsp butter.
Step 2¶
Add vegetable stock or broth, diced green bell peppers, and diced canned pineapple.
Step 3¶
Bring to a simmer, then reduce the heat, cover, and simmer for 5 minutes. Add pineapple juice, rice vinegar, sugar, salt, and ginger.
Step 4¶
Simmer stirring constantly, until reduced to about 3 cups, about 35 minutes.
Step 5¶
Meanwhile, stir together in a small bowl cornstarch, vegetable stock or broth, and soy sauce.
Step 6¶
Stir into the sauce and simmer 5 minutes to thicken.
