Balsamic Pesto¶

Ingredients¶
1 cup (92 g) leeks
- 1 cup (42 g) chives
0.75 cup (170 g) Manchego cheese
0.67 cup (95 g) toasted pine nuts
0.5 cup (100 g) olive oil
2 Tbsp (21 g) white balsamic vinegar
1 tsp (5 g) lemon zest
0.5 tsp salt

Instructions¶
Step 1¶
Combine 1 cup sliced leeks; 1 cup packed fresh chives; ¾ cup shredded Manchego cheese; ⅔ cup toasted pine nuts; ½ cup extra virgin olive oil; 2 Tbsp white balsamic vinegar; 1 tsp lemon zest; and ½ tsp kosher salt in a food processor.
Step 2¶
Process until nearly smooth. Add up to 2 Tbsp additional olive oil to reach desired consistency.
