Ina Garten's Perfect Vinaigrette
- 🥂 3 Tbsp Champagne vinegar
- 0.5 tsp Dijon mustard
- 0.5 tsp garlic
- 1 egg yolk1
- 0.75 tsp salt
- 0.25 tsp pepper
- 0.5 cup olive oil
- 1 small bowl
In a small bowl (or large measuring cup), whisk together the Champagne vinegar, Dijon mustard, garlic, egg yolk, salt, pepper.
While whisking, slowly add the olive oil until the vinaigrette is emulsified. Toss the greens with enough dressing to moisten and serve immediately.
If you don’t want to use raw egg, leave it out. You can also use extra mustard to help emulsify ↩
