Balsamic Pesto

Ingredients
1 cup leeks
1 cup chives
0.75 cup Manchego cheese
0.67 cup toasted pine nuts
0.5 cup olive oil
2 Tbsp white balsamic vinegar
1 tsp lemon zest
0.5 tsp salt

Instructions
Step 1
Combine 1 cup sliced leeks; 1 cup packed fresh chives; 3/4 cup shredded Manchego cheese; 2/3 cup toasted pine nuts; 1/2 cup extra virgin olive oil; 2 Tbsp white balsamic vinegar; 1 tsp lemon zest; and 1/2 tsp kosher salt in a food processor.
Step 2
Process until nearly smooth. Add up to 2 Tbsp additional olive oil to reach desired consistency.
