Combine 2 cups packed fresh cilantro; 2/3 cup toasted pepitas; 1/2 cup crumbled Cotija cheese; 1/2 cup canola oil; 1 small jalapeño chile, seeded if desired; 2 Tbsp lime juice; 1 clove garlic, halved; and 1/4 tsp kosher salt and 1/4 tsp pepper in a food processor.
