Jalapeño Lime Pesto¶

1 cup canola oil
2 small jalapeño chiles
4 Tbsp lime juice
2 cloves garlic
0.5 tsp salt
0.5 tsp pepper

Instructions¶
Step 1¶
Combine 2 cups packed fresh cilantro; ⅔ cup toasted pepitas; ½ cup crumbled Cotija cheese; ½ cup canola oil; 1 small jalapeño chile, seeded if desired; 2 Tbsp lime juice; 1 clove garlic, halved; and ¼ tsp kosher salt and ¼ tsp pepper in a food processor.
Step 2¶
Process until nearly smooth. Add up to 2 Tbsp additional canola oil to reach desired consistency.
