Joy of Cooking Pesto¶

| 1 cup | 20 minutes |
Ingredients¶
2 cups basil leaves
0.5 cup Parmesan
0.33 cup pine nuts
2 cloves garlic
0.5 cup olive oil
some salt
some pepper
Cookware¶
- 1 skillet
- 1 food processor
Instructions¶
Step 1¶
Toast pine nuts in a skillet.
Step 2¶
Combine in a food processor and process to a rough paste basil leaves, grated Parmesan, pine nuts, and garlic.
Step 3¶
With the machine running, slowly add olive oil, or as needed.
Step 4¶
If the pesto seems try (it should be a thick paste), add a little more olive oil. Season to taste with salt and pepper.
Step 5¶
Use immediately, or pour a very thin film of olive oil over the top, cover, and refrigerate for up to 1 week.
