Lemon Arugula Pesto

Ingredients
- 2 cups arugula
- 0.75 cup Parmesan
- 0.67 cup hopped toasted walnuts
- 0.5 cup basil
- 0.5 cup olive oil
- 3 cloves garlic
- 1 tsp lemon zest
- 2 Tbsp lemon juice
- 0.25 tsp salt

- 1 food processor
Instructions
Step 1
Combine 2 cups packed fresh arugula; 3/4 cup shredded Parmesan cheese; 2/3 cup hopped toasted walnuts; 1/2 cup packed fresh basil; 1/2 cup extra virgin olive oil; 3 cloves garlic, halved; 1 tsp lemon zest; 2 Tbsp lemon juice; and 1/4 tsp kosher salt in a food processor.
Step 2
Process until nearly smooth. Add up to 2 Tbsp additional olive oil to reach desired consistency.
