Lemon Arugula Pesto¶

Ingredients¶
2 cups arugula
0.75 cup Parmesan
0.67 cup hopped toasted walnuts
0.5 cup basil
0.5 cup olive oil
3 cloves garlic
1 tsp lemon zest
2 Tbsp lemon juice
0.25 tsp salt

- 1 food processor
Instructions¶
Step 1¶
Combine 2 cups packed fresh arugula; ¾ cup shredded Parmesan cheese; ⅔ cup hopped toasted walnuts; ½ cup packed fresh basil; ½ cup extra virgin olive oil; 3 cloves garlic, halved; 1 tsp lemon zest; 2 Tbsp lemon juice; and ¼ tsp kosher salt in a food processor.
Step 2¶
Process until nearly smooth. Add up to 2 Tbsp additional olive oil to reach desired consistency.
