Pumpkin Curry Sauce

Ingredients
- 1 Tbsp olive oil
- 1 yellow onion
- 1 Tbsp garlic
- 1 tsp ginger
- 2 Tbsp red curry paste
- 1 cup pumpkin puree
- 1 15-oz can coconut milk
- 0.5 tsp pepper
- 1 tsp salt

Instructions
Step 1
Heat the olive oil in a large skillet over medium heat.
Step 2
Once the oil is hot, add diced yellow onion, garlic, and ginger to the pan.
Step 3
Cook the aromatics until the onion is translucent, about 5 minutes.
Step 4
Add the red curry paste, pumpkin puree, coconut milk, pepper, and salt to the pan and stir well. Bring the curry sauce to a simmer and cook for 15 minutes.
