Ranchero Sauce

Ingredients
- 1 Tbsp olive oil
- 2 shallots
- 2 cloves garlic
- 12 oz piquillo peppers
- 1 jar roasted red peppers (alternative)
- 4.5 oz chopped green chiles
- 1 cup vegetable stock
- 1 Tbsp cumin
- 1 Tbsp brown sugar
- 0.25 tsp liquid smoke
- 0.5 cup heavy cream
- some Salt
Cookware
- 1 saute pan
- 1 immersion blender
Instructions
Step 1
Place a saute pan over medium heat and add the olive oil and shallots. Sauté the shallots for 2 minutes. Then add the garlic and sauté another 1 to 2 minutes.
Step 2
Drain the piquillo peppers or roasted red peppers (alternative). Add the chopped green chiles, vegetable stock, cumin, brown sugar, and liquid smoke to the saute pan, except for the heavy cream. Simmer the ranchero sauce for 10 minutes. Remove from heat.
Step 3
Using an immersion blender, puree the ranchero sauce until smooth. Then stir in the heavy cream. Salt to taste.
