Sweet-and-Spicy Ketchup

Ingredients
- 1 Tbsp olive oil
- 1 small onion
- 2 cloves garlic
- 0.25 cup brown sugar
- 0.5 tsp smoked paprika
- 0.25 tsp allspice
- 0.25 tsp ground cloves
- 0.33 cup distilled white vinegar
- 1 Tbsp tomato paste
- 2 8-oz cans tomato sauce
- some salt
- some pepper

- 1 saucepan
- 1 food processor
Instructions
Step 1
In a saucepan, heat the olive oil. Add the onion and garlic and cook over moderately low heat, stirring occasionally, until softened, about 7 minutes. Add the brown sugar, smoked paprika, allspice and ground cloves and cook, stirring occasionally, until the sugar melts. Add the distilled white vinegar and tomato paste and cook over moderate heat until thick, about 3 minutes. Stir in the tomato sauce and simmer over moderate heat, stirring occasionally, until very thick, 15 to 20 minutes.
Step 2
Transfer the ketchup to a blender or food processor and puree until smooth. Season with salt and pepper.
