Vinaigrette¶

Ingredients¶
1 clove garlic
3 pinches salt
0.5 tsp salt
0.13 tsp pepper
0.25 cup red wine vinegar or fresh lemon juice
1 tsp shallot
0.5 tsp prepared mustard
0.75 cup olive oil

Instructions¶
Step 1¶
If garlic flavor is desired, mash to a paste garlic and 2 to 3 pinches of salt.
Step 2¶
Remove to a small bowl. Add salt, pepper, red wine vinegar or fresh lemon juice, minced shallot, and ¼ to ½ tsp prepared mustard.
Step 3¶
Whisk until blended. Add gradually, whisking constantly after each addition olive oil.
Step 4¶
If made in advance, cover and refrigerate. Shake well before using.
